Food for a Month: Week 3

If you've been loving cooking at home, today our Food for a Month series continues with a third week of delicious recipes. (If you haven't already, check out the recipes for week one and week two.)

The Menu

Day 1: Salmon with lentil stew
Day 2: Lentil, vegetable and tofu curry
Day 3: Spanish lentils and eggs
Day 4: Lentil and vegetable soup
Day 5: Tomato, bean and tuna salad
Bonus Snack: Lentil hummus

The Plan

After sorting (picking out any shriveled lentils or little pebbles) and rinsing lentils, simmer in 6 cups water until tender, about 25 minutes. Clean Swiss chard. While lentils are simmering, “steam” string bean, fennel, onions and carrots until al dente in individual batches in the microwave. Simply spread vegetables onto the bottom of a microwave-safe vessel covered with a damp paper towel, and don’t overcrowd. The larger the vessel, the fewer the batches you’ll need to do.

  • Fennel: Clean and chop bulb; steam for about 35 seconds
  • String beans: Clean and remove ends; steam for about 90 seconds
  • Onion: Coarsely chop; steam for about 90 seconds
  • Carrots: Remove ends, scrub or peel, then slice on 1/4-inch slant. Steam for about 90 seconds.

‘Bulk’ Chop: Since a little of each ingredient is used on multiple days, you can save a bit of time each day by chopping them all together. Chop 6 cloves of garlic, 1 inch of ginger and 1 large jalapeño. Wrap well, and your chopped ingredients will have a shelf life of four days.
