The “Little Black Dress” Salad: An Easy Meal For $1.20 Per Person

This is my “Little Black Dress” Salad: a dish for all occasions. It’s vegetarian (vegan, in fact), has the amino acids of a full protein, can be served as a side dish or as a main course, and is available all year round. It’s Goldie’s famous Brown Rice and Cucumber Salad! I’ll confess, it’s only famous among my friends and family, but that probably constitutes around 400 people. Brown Rice And Cucumber Salad

4 entrée portions/8 as side dish
Active prep: 10 minutes

1 -1 ½ cups (about 3 medium sized) diced Cucumbers
½ teaspoon Kosher Salt
1 ½ tablespoons Rice Vinegar
½ clove garlic, minced
1/8 teaspoon crushed red pepper flakes
Zest of one lemon
1 cup chopped Flat Leaf (Italian) Parsley
½ - 1 can chick peas
Juice of one lemon
Salt & Pepper
2- 2 ½ cups cooked Organic Short Grain Brown Rice- at room temperature
3 tablespoons Olive Oil

Mix cucumbers, salt, garlic and vinegar and let stand for about 10 minutes. Add pepper flakes, parsley, lemon zest and chick peas. Add lemon juice, salt, and pepper. Stir well. Add rice and incorporate. Mix the olive oil in right before serving.

For a really quick assembly time: Buy a container of brown rice at your local Chinese restaurant instead of “slaving” over a hot stove. If cooking brown rice yourself, water to rice proportion is 2:1.
