2 cups granola
2 cups sliced, hulled strawberries (fresh or frozen)
1 cup blueberries (fresh or frozen)
2 cups low-fat plain yogurt
Layer the granola, yogurt and fruit in a glass or serving dish. Make as many layers as desired per each glass. -
Easy Egg Burrito

Ingredients:
4 10″ tortillas8 eggs
8 teaspoons water
4 teaspoons butter
Toppings of choice (shredded cheese, olives, tomatoes, chopped peppers, onions, etc.)
Warm a tortilla in a skillet over medium heat on 30 seconds per side. This should make it soft and flexible. Set on a plate.
Whisk together the eggs and 2 teaspoons water. Melt 1 teaspoon butter in a skillet and pour the eggs in. Pull the sides of the egg away from the pan and tilt the eggs into the open area so that they cook evenly. Scatter on the toppings and cook for another 30 seconds or until the eggs are set, but still a little shiny.
Slide eggs onto the warm tortilla. Pinch the ends of the tortilla in and roll it up to make a wrap. Repeat to make remaining wraps.

Hot Grape-Nuts With Maple Syrup

2 cups Grape-Nuts cereal
1 cup skim milk
¼ cup maple syrupIn a large microwaveable bowl combine the cereal, milk and maple syrup.
Microwave on high for 50 seconds. Rotate once and microwave for an additional 30 seconds.
Taste for desired consistency and microwave in ten second increments if softer cereal is desired. Divide among four bowls and serve.

2 small apples, shredded
1 cup skim milk
¼ cup raw sugar
1 teaspoon cinnamonCook the oatmeal according to package directions on the stovetop or in the microwave. Stir in the shredded apple (here are easy instructions for using a hand grater or food processor to shred), milk, sugar and cinnamon. Top with extra apple slices if desired.
Spoon into bowls and serve. -
Whole Wheat French Toast Sticks

4 slices whole wheat bread, cut into sticks
2 extra large eggs
1/2 cup 1% milk
1 teaspoon cinnamon
1 tablespoon butter
Heat butter in a small skillet over medium heat. Allow it to melt slowly and push it around to coat the bottom of the pan. Meanwhile, in a shallow bowl whisk together the eggs, milk and cinnamon. Dredge both sides of the bread in the egg mixture until each piece is fully coated.
Place it in a skillet and toast each side until golden brown. Serve hot. -

1/2 cup all-purpose flour
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
Butter for the panIn a large bowl, beat the eggs. Then whisk in the yogurt, flour, sugar, salt and baking soda.
Warm the butter in a skillet and slide it around until the bottom of the skillet is coated. Pour in the batter and cook until the pancake has bubbles on top. Then flip the pancakes and cook until golden brown on the other side. -
Spring Tomato and Cheese Omelet

8 eggs
8 tablespoons 1% milk

1 tomato, sliced
4 ounces shredded Gruyère
Salt and pepper
In a small bowl, beat the eggs until pale yellow. Add in milk and a pinch of salt and pepper.
Melt the butter in a skillet over medium-high heat and add 1/4 of the egg mixture. Use a spatula to pull back the edges of the egg until all sides are cooked. Layer 1/4 of the tomatoes into the omelet and sprinkle with a pinch of cheese. Fold the omelet over and remove from the pan. Repeat this process with the remaining eggs to make three more omelets.
