This is a fantastic, easy and ultra budget-friendly meal I came across on Pinterest. You can purchase all ingredients for around $5-$6, and it feeds at least 4 people. Make it even cheaper by using frozen ravioli instead of tortellini. I also substitute turkey sausage and light dressing to make it a little lower in calories. My husband loves the meal, and I love the price!
I found this recipe a few years back and I just love it on a cold winter day. Garlic, Olive oil, eggs & Parmesean cheese make this soup wonderful. It's hard to beat roast chicken for a budget meal since it will stretch into two or three meals. Start by roasting chicken with vegetables and potatoes; night two can be chicken tacos, and then use whatever is left over to make a hearty soup.
Curried Quinoa is a delicious and healthy meal or side dish perfect for cold days. I adapted the recipe from the Moosewoods Cookbook.
I usually buy the 4lb bag of quinoa grain at Costco and it lasts me for a couple months, you can also add other veggies or spices to quinoa and get creative.
- In a saucepan, heat oil and saute 1/2 diced onion for 4 min on med-high. - Add ~1 tsp grated ginger root (fresh is best) and 1 cup of quinoa (rinsed and drained), cook for 1 min. - Stir in 2 tsp of garam masala (you can also add spices separately based on your taste - cayenne, coriander, cinnamon, etc) & 1/2 tsp salt, cook for 1 min. - Add 2 cups stock (chicken or veggie) and bring to a boil. Cover, reduce heat, and simmer for 15 min. - Stir in green peas (frozen or fresh - I use the petit french ones from Trader Joes) and cook for another 5 min until tender. - Fluff with fork, add additional seasoning if needed, and some fresh chopped cilantro if you wish!
My fav it tomato soup and grilled cheese on a rainy or cold day cost about 6 or my mom makes the best beef stew with carrots,celery, and some rice for our family of four for just 8-9 bucks and there are always seconds!!!
French onion soup is delicious on those cold winter days, and it is easily made with a few herbs, onions, beef broth, gruyere and some bread for dipping! Cheap and delicious!
Adding to what PamH said, cutting meat out of my diet means almost every meal I eat is budget-friendly! I've been a vegetarian for just over two years now and can say I'm spending at least $20/week less on groceries than I was spending as a meat-eater. Don't want to give up meat? Try cutting it out just one day per week and see if it helps your monthly budget!
The easiest meal I have put together is in the crockpot. Hamburger Soup. It feeds about 15 one cup servings (we usually eat a little over one cup servings) and costs about $7 to $8 to make. The most expensive item is the one pound of 95% lean ground chuck. The package of frozen mixed veggies (10 for $10), can of diced tomatoes($.79), can of tomato sauce ($.89) and the rest of the ingredients makes for a hearty meal that can be accompanied with some cornbread and you have either several meals over the period of several days, or you can feed the group of people that show up to watch football on the weekends. Plus, you don't have to do anything but dump everything in the crockpot, turn it on and wait about 4 -6 hours (depending on the temperature setting). Easy!
