On top of everything else you need to do to get your family settled into the back-to-school routine comes one more overarching question–what’s for dinner?

With the hectic fall season upon us, it’s even more important to plan for your family meals. We’ve covered some quick and tasty meal options in the past:

Today, we’re back with another awesome, easy weeknight idea (carrot ginger soup that will feed four to six people for only $6!) from Catherine McCord.

You might remember Catherine as one of the moms from our Dove-sponsored LV Moms Panel Catherine’s site, Weelicious, offers daily recipes and how-to cooking videos for busy families. Her cookbook, “Weelicious: 140 Fast, Fresh, and Easy Recipes,” is out September 18.

    My families easy go to fall recipe is Chicken Tortilla Soup.

    I use leftover chicken shredded, several cups
    2 cups of frozen corn
    1 can of black beans rinsed
    1 bunch of cilantro (just the leaves)
    2 quarts of low sodium chicken stock
    sour cream optional
    fried tortilla strips optional

    Combine all of the above ingredients and heat for 10-15 minutes until the flavors marry.  Top with sour cream, fried tortilla strips or guacamole!

    My family’s favorite easy fall recipe is cabbage soup.  We love how versatile it is.  Just start with a large can of V-8 and one can of water, add some shredded cabbage, and then you can get creative and add any other vegetables you have on hand.  Ours is never the same twice, because we always change the spices to suit our taste at the moment, and we usually have different veggies on hand.  Adding ground beef is optional.

    Our go to fall recipe is baked potato soup. I can bake the potatoes ahead of time and then it only takes about 20 minutes to make the soup.

    Our favorite Fall meal (and quick) is organic butternut squash soup with crusty bread and cheddar cheese.  Very yummy!

    Our go-to meal involves browning some protein (ground beef, chicken, turkey, whatever we have on hand), tossing in some starch (rice or small pasta), a can of tomatoes, some stock, and whatever veggies we have on hand. Bring to a boil, then simmer until the starch is cooked, and voila! It turns out different each time based on the protein, seasoning, and veggie combos you add in!

    We love making a simple southwest chicken soup. It’s chicken, tomatoes, squash, corn, black beans, onion and garlic. It’s super yummy and comforting. You can add shredded cheese and/or tortilla chips for an extra treat. Happy fall!!

    That is great!!! My favorite fall meal is tuna over rice- simple, cheesy and ultimate comfort food- in the crock pot or on the stove top!

    Tacos!  They are fast, easy and versatile!  Plus, our kids love them!  Sometimes we will make quesadillas for the kids while we have grown up tacos!

    chicken cutlets is always a winner. when stuck for an idea that we all will eat, baked chicken cutlets is the default.

    My family loves homemade chicken and noodles. By using a rotisserie chicken and Reames frozen egg noodles, it is an easy meal that makes plenty of extra servings for the freezer.

    The carrot ginger soup sounds and looks delicious, our family favorite is the classic chicken noodle soup and sometimes the Fideo with chicken is similar and both are so warm and delicious.

    I whip up a quick pasta sauce. EVOO, fresh garlic, crushed red pepper flakes, basil, oregano, salt & pepper……tomatoes of course (usually 1 lg can of whole Italian plum and 1 lg can of crushed tomatoes. I will crank it up on med/high it about 1/2 before we go to football practice, then turn it off and cover it with a lid…..there is enough carryover heat to continue cooking it and buy the time we get home from practice all that I have to do is boil water, cook pasta & sprinkle on the Locatelli! It makes dinner for four, lunch for hubby the next day ( sometomes tgere is enough for my lunch too) and plenty of sauce for one more dinner for hubby and I that week!

    We like a vegetable raisin curry (from Meatless Dishes in Twenty Minutes).  You cook a chopped onion and 1 t. minced garlic in 2T. butter, stir in 1 T. flour, 2 t. curry powder and 1/4 t. cayenne, then add a 16 oz. package of frozen mixed vegetables, 1/3 c. raisins, 1/2 t. salt and 1 c. broth.  Bring this to a boil, then simmer for 10 min.  Meanwhile, you make couscous with broth.  Serve the curry over the couscous, with toasted almonds on top.  Other condiments include mango chutney, chopped tomato and shredded coconut.

    Roast chicken with lots of citrus stuffed in the cavity. Cumin rubbed on the outside, squeeze a little orange juice and lemon juice on outside, and leave a few quartered (unsqueezed) lemons and oranges in pan and squeeze the juice of a few more into bottom of pan and leave the squeezed ones in the pan too. Roast at 375. Add stock as needed so it is moist on bottom of pan.
