We know that seafood is perfectly suited to be cooked en papillote, a method of cooking where we wrap our food in parchment paper and let the steam cook it in an oven.

Because scallops are rather a luxury, the dish will cost you about $14 for two people (and that included the papillote!) With a little parchment paper and 15 minutes of your day, you can create a healthy, affordable dish.
Scallops en Papillote
Prep time: 5 minutes
Total time: 15 minutes
1 large handful spinach, chopped
5-6 oz scallops
¼ red pepper (about 3 oz) thinly sliced
3 shiitakes, sliced
2 oz fennel, thinly sliced
1 tsp ginger
A dash of Bragg’s (optional)
1-2 tbsp sake, vermouth, white wine or vegetable stock
Prepare parchment paper by cutting a folded 16 inch piece into a heart shape. Place spinach on one side of the heart. Pile on all dry ingredients. Add a touch of Bragg’s and drizzle sake over pile. Fold the parchment in half and seal the parchment (see above). Place the package on a cookie sheet and bake at 450 F for 10 minutes.
